It's official...I am a foodie....

So if you know me, you know that 5 years ago I was a MESS in the kitchen. Capital M-E-S-S! If the directions weren't on the box, I couldn't do it! 

And my fabulous mother made it worse, she is like Martha Stewart on crack! I kid you not, the woman is amazing and does the tiniest details to EVERYTHING! When we go home, she has about 8 appetizers waiting on us, several wine options and a drink station for the hubs...Jack and Diet with an ice bucket in the cooler months, and Kettle One and lemons with in ice bucket in the hotter months. Then she cooks a full out meal for every meal we have that weekend....2 different kinds of casseroles plus bacon and sausage and fruit for breakfast.....sandwiches for lunch - and of course they aren't you basic ham and cheese - they are for real! Then a 3 course meal for dinner! Needless to say we gain about 15 pounds every time we go home.

That all being said, I just thought I didn't have it in brother is a chef and he and my mom can talk about food all day long, decipher what ingredient is in each food to make it taste the way it does, what it needs more of, less of, etc. etc.....I had no clue. I would just chat with my Daddy! :) The thought of cooking a Thanksgiving dinner sounded like my hell and stressed me out to the max just to think about it!!

Then, The Hubs came along...our 2nd date, he cooked for me. And man, did he cook for me! The best steak and chicken fajitas I have ever had. I felt the could I top this? What if he expects me to be this 50s housewife that can cook and bake anything?!?! I can only make brownies!! OUT OF A BOX!!

Well, a few weeks later I decided I should try.....I made this recipe, Best Ever Meatloaf....I was terrified...I must have checked it about 15 times to make sure I wasn't over doing it. But.... I didn't, and he loved it! Said it was better than his mom's!! Now, I do understand we were still newl dating so he would say anything he could to make me smile....but I took it and ran with it! I called my mom bragging, I was so proud - as was she! I also made potatoes...which didn't turn out as well, but we won't talk about that....

But my point is, I have come a long long way! I actually still make that meatloaf and add my own little tweaks that I think make it better (ground turkey is fabulous!!), and if you can believe it...I really don't have to go by the recipe any more...I just do! :) And I love finding new recipes and making them my own! I get excited to have people over to cook for opposed to buying store made for them as I used to do!:)...I love an excuse to make something yummy that people love!

Oh My Gosh - I love those egg molds!! And the waffle maker!! If you ever find where to buy those, please let me know!! Gotta go... I'm hungry now ;o)
